  • 2 lbs beef, cubed
  • 2 tablespoons vegetable oil
  • 2 large onions, finely chopped
  • 6 cloves garlic, minced
  • 2-inch piece of ginger, grated
  • 2 tablespoons vinegar
  • 2 tablespoons tamarind paste
  • 1 teaspoon mustard seeds
  • 1 teaspoon fenugreek seeds
  • 1 teaspoon turmeric powder
  • 2 teaspoons chili powder
  • 2 teaspoons cumin powder
  • 2 teaspoons coriander powder
  • 1 cinnamon stick
  • 4 cloves
  • 4 green cardamom pods
  • Salt to taste
  • 2 cups water
  • Fresh cilantro for garnish


Heat the oil in a large pot over medium heat.  mustard seeds and let them splutter.
 the onions and sauté until golden brown.
Add the garlic and ginger, and cook for another 2 minutes.
Stir in the turmeric, chili powder, cumin, and coriander. Cook for 2-3 minutes until fragrant.
Add the beef cubes, and cook until browned on all sides.
Pour in the vinegar and tamarind paste, and stir well to combine.
Add the cinnamon stick, cloves, and cardamom pods.
Pour in the water, season with salt, and bring to a boil.
Reduce the heat and let simmer for 1-2 hours, or until the beef is tender and the sauce has thickened.
Garnish with fresh cilantro before serving.
