Ingredients
- 6 medium sized potatoes, we use red for the creamier texture
- Olive oil
- Salt and pepper to taste
- 6 slices of half cooked bacon
- 2 jalapeno peppers, seeded and sliced
- ¾ cup extra sharp cheddar cheese, shredded
- ½ to 1 cup barbecue sauce, your favorite flavor is perfect
- Chopped green onion for garnish
Topping:
- 1 cup sour cream
- Red hot sauce to taste
- 1 tsp smoked paprika
- 2 tsp garlic powder
- 2 tsp onion powder
- Salt and pepper to taste
Instructions:
Microwave the potatoes for 5 minutes
Scoop out the inside of the potatoes and place into a bowl
In a bowl, with the potatoes, add in the sour cream, salt and pepper, garlic powder, onion powder and chopped half cooked bacon and jalapenos and combine well.
Pour in the barbecue sauce and stir to combine.
Place the scooped out potatoes on a baking sheet that is lined with parchment
Place a heaping scoop of the filling mix into each potato
Sprinkle each with shredded enjoy
