Although this recipe will take you a bit of time, it’s really not that difficult to make. But what I love about this recipe the most, is that you end up with lots of leftovers!

✨ Ingredients:
✅ For the Birria:
- 2 lbs beef chuck roast
- 4 dried guajillo chiles
- 2 dried ancho chiles
- 1 chipotle pepper in adobo sauce
- 4 cloves garlic
- 1 medium onion
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp ground cloves
- 1/2 tsp ground cinnamon
- 2 bay leaves
- 4 cups beef broth
- Salt and pepper to taste
✅ For the Tacos:
- 8-12 corn tortillas
- 2 cups Oaxaca cheese or mozzarella, shredded
- 1/2 cup cilantro, chopped
- 1/2 cup onions, finely chopped
- Lime wedges for serving
- Cooking oil
🔥 Instructions:
🔻 Step 1: Preparing the Birria
Toast the chiles in a dry pan until fragrant, then soak them in hot water until softened.
Blend the chiles with garlic, onion, chipotle, cumin, oregano, cloves, cinnamon, and some beef broth to make a smooth paste.
Season the beef with salt and pepper, then sear it in a hot pan until browned on all sides.
Place the beef in a smoker set to 250°F (120°C) and smoke for 4-5 hours until tender.
Shred the beef and mix with the chile paste and remaining beef broth. Simmer for an additional 30 minutes.
🔻 Step 2: Assembling the Tacos
Dip tortillas in the birria broth and fry in a hot pan with oil until slightly crispy.
Fill tortillas with cheese and shredded birria beef, fold, and cook until cheese melts.
Serve with chopped onions, cilantro, and a squeeze of lime.
