– can (14.5 ounces) diced tomatoes
– 6 cups chicken broth
– 2 cups cooked chicken, shredded or diced
– 1 cup frozen corn kernels
– 1 can (15 ounces) black beans, drained and rinsed
– Juice of 1 lime
– Salt and pepper to taste
– 1/4 cup chopped fresh cilantro
– Tortilla chips, for serving
– Avocado slices, for serving
– Shredded cheese, for serving (optional)
– Sour cream or Greek yogurt, for serving (optional)
Instructions:
1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
2. Stir in the minced garlic and jalapeño pepper (if using) and cook for another minute until fragrant.
3. Add the ground cumin and chili powder to the pot, stirring to coat the onions and garlic in the spices.
4. Pour in the diced tomatoes (with their juices) and chicken broth. Bring the soup to a simmer.
5. Once the soup is simmering, add the cooked chicken, frozen corn, and black beans. Let the soup simmer for about 15-20 minutes to allow the flavors to meld together.
6. Squeeze in the juice of one lime and season the soup with salt and pepper to taste.
7. Just before serving, stir in the chopped fresh cilantro.
8. To serve, ladle the soup into bowls and top each serving with crushed tortilla chips, avocado slices, shredded cheese (if desired), and a dollop of sour cream or Greek yogurt.
