Butterscotch Bread Pudding

Butterscotch Bread Pudding is a decadent and comforting dessert that combines rich, buttery flavors with the nostalgic appeal of classic bread pudding. Imagine tender cubes of bread soaked in a luscious custard infused with the sweet and indulgent taste of butterscotch, baked to golden perfection and served warm with a drizzle of caramel sauce.

 

Ingredients:

  • – 8 leftover biscuits (stale ones are perfect)
  • – 1 packet (28g) butterscotch pudding mix
  • – 2 cups whole milk
  • – 4 eggs
  • – ½ cup packed brown sugar
  • – 2 tsp vanilla extract
  • – 1 cup butterscotch chips

Toppings:

  • – Butterscotch sauce (store-bought)
  • – Vanilla ice cream (optional)



Instructions:


1. Preheat the oven to 350°F (175°C). Grease an 8×8 baking dish with spray oil.
2. Break the leftover biscuits into chunks and spread them evenly in the greased baking dish.
3. In a large bowl, whisk together the butterscotch pudding mix, whole milk, eggs, brown sugar, and vanilla extract until thoroughly combined.
4. Pour the mixture over the biscuits in the baking dish, ensuring all biscuits are soaked. Let it sit for about ten minutes to allow the biscuits to absorb the liquid.
5. Sprinkle the butterscotch chips evenly over the top of the pudding mixture.
6. Place the baking dish in the preheated oven and bake for approximately 40 minutes, until the pudding is set and golden brown.
7. Once done, remove from the oven and let it cool slightly.
8. Serve warm with a generous drizzle of butterscotch sauce on top. For an extra indulgence, add a scoop of vanilla ice cream.
