Ingredients:
For the Cake:
- 1 cup (2 sticks) unsalted butter, softened
- 8 oz cream cheese, softened
- 3 cups granulated sugar
- 5 large eggs
- 1 tsp vanilla extract
- 3 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1 cup fresh strawberries, chopped
For the Strawberry Glaze (optional):
- 1/2 cup fresh strawberries, pureed
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1-2 tbsp milk (if needed for consistency)
Instructions:
1. Preheat oven to 325°F (163°C).
Grease and flour a 10-inch bundt or tube pan.
2. Make the cake batter:
In a large mixing bowl, beat the softened butter and cream cheese together until smooth and creamy.
Gradually add the sugar and beat until light and fluffy.
Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
3. Add dry ingredients:
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, alternating with milk, starting and ending with the flour mixture. Mix until just combined.
4. Fold in strawberries:
Gently fold in the chopped strawberries into the batter.
5. Bake the cake:
Pour the batter into the prepared bundt or tube pan.
Bake for 60-70 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Let the cake cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
6. Make the glaze (optional):
While the cake is cooling, blend fresh strawberries into a puree.
In a bowl, whisk together the strawberry puree, powdered sugar, and vanilla extract.
If needed, add a little milk to thin the glaze to your desired consistency.
7. Glaze and serve:
Once the cake is fully cooled, drizzle the strawberry glaze over the top of the cake.
