To make awesome apple pie cookies, start by preparing a pie crust dough. Roll out the dough and use a cookie cutter to cut out rounds, similar to making traditional cookies.

For the apple filling, combine diced apples with sugar, cinnamon, nutmeg, and a little lemon juice to add brightness and prevent browning. 

Place a spoonful of the apple filling onto each round of pie crust dough. Fold the dough over the filling to create a half-moon shape and crimp the edges with a fork to seal.

Brush the tops of the cookies with an egg wash for a shiny finish, and sprinkle with sugar for added sweetness and texture.

It is my grandmother’s favorite recipe. It is a sticky, chewy, bite-sized apple pies. 

 

Ingredients

 

  • ¼ cup butter
  • (4) eaches apples, peeled, diced into 1/4-inch cubes
  • ½ cup brown sugar
  • ¼ cup white sugar
  • 1 ½ tsp lemon juice
  • 1 ½ tsp ground cinnamon
  • ½ tsp vanilla extract
  • ¼ tsp salt
  • ¼ tsp ground nutmeg
  • ¼ tsp ground allspice
  • ⅛ tsp ground cloves
  • 2 tbsp water
  • 1 tbsp cornstarch
  • (4) sheets pie crust pastries
  • 1 tsp all-purpose flour

For the Icing:

  • ¾ cup confectioners’ sugar
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 ½ tbsp milk

 

Directions

 

Preheat oven 350 degrees F (175 degrees C).

Add and melt butter in a saucepan over medium heat.

Add apples, toss until coated with butter.

Then stir in brown sugar, white sugar, lemon juice, 1 1/2 tsp of cinnamon, 1/2 tsp of vanilla extract, salt, nutmeg, allspice, and cloves, cook and stir until apples have softened and sugars melt for 5 minutes.

Let it boil.

Combine water and cornstarch in a bowl.

Then stir cornstarch mixture into the apple mixture, cook and stir until apple mixture thickens for 5 minutes. Remove it from heat, and cool completely about 20 minutes.

Roll out a sheet of pie crust on a work surface with a rolling pin, cover with half of the cooled apple mixture.

Roll out a second pie crust sheet with a rolling pin; slice with a sharp knife into 1/2 “wide strips. Weave pie crust strips over apple mixture to create a lattice top.

Then flour a round cookie cutter or drinking glass.

Press cookie cutter through the dough to create 12 round pies. Transfer it to a baking sheet.

Bake until the crust is cooked through a golden brown in the preheated oven for about 20 minutes.

 

Then repeat with remaining pie crusts and apple mixture, and put on a second baking sheet.

Then bake in the oven until the crust turns golden brown and cook through about 20 minutes.

Add and combine confectioners’ sugar and a tsp of cinnamon in a mixing bowl; add a tsp of vanilla extract.

Then stir in milk slowly until you get your desired consistency is reached, drizzle over cooled pies.
