  • 1/2 Tbsp olive oil
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp cinnamon
  • 1/2 tsp smoked (or regular) paprika
  • Pinch of sea salt or lemon juice (optional)

Garlic Herb Sauce:

  • 1/4 cup hummus (or tahini)
  • Juice of 1/2 medium lemon (~1 Tbsp juice)
  • 3/4 – 1 tsp dried dill (or 2-3 tsp fresh dill)
  • 3 cloves garlic, minced (~1 1/2 Tbsp or 9 g)
  • Water or unsweetened almond milk (to thin)
  • Sea salt to taste (optional)

Toppings (optional):

  • 1/4 cup cherry tomatoes (diced)
  • 1/4 cup parsley (minced)
  • 3 Tbsp red onion (finely chopped)
  • 2 Tbsp lemon juice
  • Chili garlic sauce

 

Instructions

  1. Preheat the oven to 400°F (204°C) and line a large baking sheet with foil.
  2. Rinse and scrub the sweet potatoes, then cut them in half lengthwise to reduce cooking time. If you prefer to bake them whole, it will take about 45 minutes to 1 hour.
  3. Toss the rinsed and drained chickpeas with olive oil and spices, and spread them on the foil-lined baking sheet.
  4. Rub a bit of olive oil on the sweet potatoes and place them face down on the same baking sheet as the chickpeas (or use a separate sheet if needed). Transfer to the preheated oven.
  5. Bake until the sweet potatoes are fork-tender and the chickpeas are golden brown, about 25 minutes.
  6. While everything is roasting, prepare the garlic herb sauce by mixing all the sauce ingredients in a bowl. Whisk until smooth, adding enough water or almond milk to make it pourable. Taste and adjust seasonings as needed.
    If using tahini instead of hummus, adjust the seasonings accordingly.
