INGREDIENTS:

  • 3 eggs;
  • 200g (1 cup) sugar;
  • 1 tsp vanilla extract;
  • 200 g (⅔ cup) yogurt;
  • 280g (2 cups) all-purpose flour;
  • 16g (2 tbsp) baking powder;
  • 1/2 tsp cinnamon;
  • 2 apples;
  • 30g (2 tbsp) butter, melted.

METHOD:

Preheat the oven to 170C/340F. Cover a 16 cm round baking pan with parchment.
Beat eggs with sugar and vanilla until pale and fluffy. Add yogurt and whisk until combined.
Separately sift the flour and whisk it with cinnamon and baking powder.
Combine wet and dry ingredients until smooth batter forms.
Peel and core one apple, chop it into cubes and stir into the batter.
Pour the batter and spread it evenly in the baking pan. Place another one apple, cored and thinly sliced, on top.
Pour melted butter over and bake the pie for 1 hour 30 minutes.
