- 5 egg yolks or 4 large
- 80g sugar
- 3 sheets of gelatin or 2 g of agar agar
Recipe steps:
Soften the gelatin in cold water In a saucepan, bring the sugar and 50 ml of water to the boil to obtain a syrup Blend the strawberries in a blender to obtain a coulis Pour the egg yolks into the bowl of a food processor and Gradually add the syrup in a trickle while whisking to obtain a very light foam Pour the strawberry coulis into a saucepan and bring to the boil then add the drained gelatin.
If you are using agar agar, add it to the cold coulis then bring to the boil Gradually pour the coulis into the bowl of the food processor with the egg yolks and syrup mixture while whisking. You will obtain a thick mousse that you can enjoy as it is or in a cake version.
To make a cake, take a springform pan with rhodoid paper, place spoon biscuits or pink biscuits from Reims in the bottom and pour the mousse on top .
Reserve in the fridge for one night then unmold and decorate with slices of strawberries.
