To start, you’ll need English cucumbers, cherry tomatoes, cream cheese, fresh herbs (such as dill, chives, or parsley), garlic powder, salt, and pepper.

First, prepare the herb cream cheese. In a bowl, combine softened cream cheese with finely chopped fresh herbs, garlic powder, salt, and pepper. Mix until well combined and smooth. Adjust the seasoning to taste.

Next, prepare the cucumbers and cherry tomatoes. Wash the cucumbers and slice them into rounds, about 1/4 inch thick. Wash the cherry tomatoes and slice them in half.

To assemble the cucumber bites, spread a small amount of the herb cream cheese onto each cucumber round. Top with a cherry tomato half, pressing down slightly to adhere.

Arrange the assembled cucumber bites on a serving platter and garnish with additional fresh herbs, if desired.

These Cucumber Bites with Herb Cream Cheese and Cherry Tomatoes are not only delicious but also a healthy and low-calorie option. They are perfect for serving as an appetizer or snack, and their vibrant colors and fresh flavors are sure to impress your guests.

Ingredients:

  1. 4 ounces (1 Brick) cream cheese, softened to room temperature
  2. 1/4 cup ranch dressing
  3. 2 tablespoons fresh dill or thyme
  4. 3 to 4 long cucumbers, skinned and sliced into 1 inch slices
  5. 15 cherry tomatoes, sliced in half
  6. Salt, to taste
  7. Paprika or cajun spice mix, for garnish

Directions:

First, Make the herbed cream cheese: in a stand mixer, mix the softened cream cheese with the ranch dressing and herbs. Mix until well combined. Spoon into a piping bag with a star tip.

-Prepare the cucumber, remove peel, and using a fork, score the sides. Slice into 1 inch pieces. Using a melon baller, remove a portion of the center of one side of the piece of cucumber, leaving a half moon crater.

-Pipe the Herb Cream Cheese into the crater. Enough to stick out of the top about 1/2 inch.

-Add a half Cherry Tomato partially buried into the Herb Cream Cheese

-Sprinkle additional salt, herbs and spice mix for additional color. Chill in the fridge until ready to serve.

-Serve chilled and enjoy!
