MEDITERRANEAN 7-LAYER DIP

This Greek Layered Dip has layers of hummus, tzaziki, feta cheese, kalamata olives, diced tomatoes and green onions. Dip in a pita chip and enjoy!

A DELICIOUSLY DIFFERENT DIP!
I took inspiration from my favorite flavors and decided to make a Greek-inspired dip. This is similar to those popular seven layer dips except this has yummy Mediterranean flavors like tzatziki (which is just Greek yogurt with cucumbers and seasonings), Kalamata olives and tangy Feta cheese.

I loved this with the feta cheese that have Mediterranean herbs added but that is completely optional if you can’t find it.
Use your favorite flavor of hummus.
This dish can be made ahead of time and refrigerated for up to a day.

This Mediterranean 7-Layer Dip has layers of homemade tzatziki, hummus, cucumber, tomatoes, green onions, and feta.

INGREDIENTS

TZATZIKI

  • 1 (8 ounce) cream cheese, softened
  • 1/2 cup English cucumber, peeled, seeded, and diced (save the other half
  • for later)
  • 3 garlic cloves, minced
  • 2 tablespoos plain Greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoons dill, chopped (more to taste)

HUMMUS

  • 2 (15 ounce) cans garbanzo beans, drained with liquid reserved
  • 1/4 cup reserved garbanzo liquid
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 2 tablespoons tahini, found in condiment aisle
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt, more to taste
  • pinch ground cumin

OTHER TOPPINGS:

  • 1 cup English cucumber, peeled, seeded, and diced
  • 1 cup cherry tomatoes, quartered
  • 1/3 cup green onions, sliced
  • 1/4 cup crumbled feta
  • (optional) flat leaf parsley, chopped

 

INSTRUCTIONS

TZATZIKI:

Mix all ingredients together with a mixer.
HUMMUS:
Place all ingredients in a food processor and blend until smooth. Add more garbanzo bean liquid and process if you want it thinner.


ASSEMBLY:
To assemble: Spread tzatziki sauce in the bottom of a shallow serving dish or pie plate. Spread hummus on top. Top with cucumber, tomatoes, onions, feta, and parsley.
Refrigerate for 2 hours to let the flavors meld before serving.

Serve with pita chips.
