Ingredients:

  • 4 cups tater tots
  • 1 pound sausage, ground
  • 2 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • Salt and pepper to taste
  • 1/2 teaspoon paprika
  • 4 eggs
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons chopped chives



Instructions:



Bake tater tots according to package instructions until crispy.
In a skillet, cook the ground sausage over medium heat until browned and crumbly. Remove sausage and set aside.
In the same skillet, add butter and flour. Stir for about 1 minute to cook the flour.
Gradually whisk in milk, stirring continuously until the mixture thickens and becomes smooth.
Return the sausage to the skillet, season with salt, pepper, and paprika. Simmer for 5 minutes until the gravy is thickened.
In another skillet, fry the eggs to your liking.
Assemble the breakfast bowls: place a layer of tater tots, pour over the sausage gravy, top with a fried egg, sprinkle with cheddar cheese and chives.
