Chocolate Lamingtons are a classic Australian dessert made from squares of sponge cake coated in a layer of chocolate icing and desiccated coconut. They are a delicious treat with a perfect balance of chocolate, coconut, and fluffy cake.
To make chocolate Lamingtons, start by baking a sponge cake and allowing it to cool completely. Once cooled, cut the cake into even squares.
Next, prepare the chocolate icing by combining cocoa powder, powdered sugar, butter, and milk in a saucepan over low heat. Stir until the mixture is smooth and glossy.
Place the desiccated coconut in a shallow bowl. Using a fork or skewer, dip each square of cake into the chocolate icing, making sure to coat all sides. Allow any excess icing to drip off, then roll the coated cake in the desiccated coconut until evenly coated.
Place the coated Lamingtons on a wire rack to set. Once set, they are ready to be enjoyed as a delicious sweet treat or dessert.
RECIPE AND DERECTION
Step 1
In a bowl cream together 250g butter, 1 cup castor sugar and 2 teaspoon vanilla essence

Add 4 large eggs and whisk
Step 3
Add 3 cups sifted flour and 3 teaspoon baking powder
Step 4
Add 1 cup milk and whisk together
Step 5
Pour into greased baking tray and bake @ 180dc for 30 mins
Step 6
Once the cake is baked allow to cool, cut into squares and freeze for 30 mins
Step 7
Make a syrup: mix together
1 & half cups water
3 cups icing sugar
3 tbl cocoa powder
2 tbl butter
Boil it together and allow to cool completely
Step 8
Dip the cake into the syrup and coat in desiccated coconut

You can sandwich the Lamington with jam and cream which is even more delicious.
