Mom’s famous cream puffs are a delightful dessert consisting of light and airy pastry shells filled with creamy vanilla pastry cream. These cream puffs are a classic treat that’s perfect for any occasion.
To make Mom’s famous cream puffs, you’ll need ingredients like water, butter, flour, eggs, milk, sugar, cornstarch, egg yolks, vanilla extract, and powdered sugar.
Start by preheating your oven and preparing a baking sheet with parchment paper. In a saucepan, bring water and butter to a boil. Add flour and stir until a smooth dough forms. Remove from heat and let cool slightly.
Add eggs one at a time, beating well after each addition, until the dough is smooth and glossy. Drop spoonfuls of dough onto the prepared baking sheet and bake until puffed and golden brown.
While the pastry shells are baking, prepare the vanilla pastry cream. In a saucepan, heat milk until steaming. In a bowl, whisk together sugar, cornstarch, and egg yolks. Slowly pour the hot milk into the egg mixture, whisking constantly. Return the mixture to the saucepan and cook until thickened. Remove from heat and stir in vanilla extract.
Once the pastry shells are cooled, cut them in half horizontally and fill them with the vanilla pastry cream. Replace the tops and dust with powdered sugar. Serve and enjoy these delicious cream puffs!
