Minced potato roll

Crispy, cheese topped potato stuffed with MEAT and tomato sauce. Packed full of Italian flavour and way easier to make than it looks!

potatoes. Who doesn’t love a good, hearty dish with this starchy root vegetable? This widely accessible ingredient is so versatile, sometimes eating it just as is, can be soooo satisfying. You can bake it, deep fry it, stuff it– you name it!

 

 

 

 

 

 

 

I made a Scalloped Potato roll. It looked like a Swiss roll but this is the meat version. First I sliced the potatoes and baked them with eggs and cheese so that they would form a sheet. And then I made a separate meat filling using mushrooms, red bell pepper,

 

 

 

 

 

 

 

 

 

 

green bell pepper with different kinds of spices like ginger, garlic, and red chili powders. After I cooked the meat, I placed the meat filling in the middle [of the potato sheet] and then just rolled it before I cut them into a few slices.

Ingredients

 

  • 5 large sweet potatoes
  • 1 small bowl of grated cheddar cheese / 100 grams
  • 2 eggs
  • 1 teaspoon of salt
  • 1 teaspoon black pepper
  • 1 teaspoon of paprika

For minced meat:

  • 500 grams of minced meat
  • 2-3 tablespoons of oil
  • 1 onion
  • 1 hot pepper
  • 2 green peppers
  • 1 teaspoon of salt
  • 1 teaspoon black pepper
  • 1 teaspoon of red pepper powder
  • 1 tablespoon of tomato paste
  • 1 cup of water
  • 2-3 sprigs of mint
  • Bechamel sauce:
  • 1 tablespoon of butter
  • 1 tablespoon of flour
  • 1 cup milk / 300 ml
  • Salt and Pepper

 

Directions 

 

– Peel and grate the potatoes.
Squeeze the grated potato juice with your hands and put it in the mixing bowl.
– Add cheddar cheese, eggs, black pepper, salt and hot pepper to the potatoes and mix them.

Press it directly onto a tray lined with parchment paper.

Bake in a preheated oven at 190 degrees until the top and bottom turn light brown.

For the inner filling


First, the minced meat is fried in the pan, until it is cooked.
–  onions and peppers and fry in the same way.

–  spices and tomato paste and fry.
– hot water and mix, when it dries up from the water, remove it from the heat.


– Take the tray out of the oven and cover it with the minced meat.


Roll it up and put it in the middle .
