Decadent Chocolate and Ripe Pear Delight

Ingredients:

  • 1 cup all-purpose flour
  • 1/3 cup unsweetened Dutch-processed cocoa powder
  • ¾ teaspoon baking soda
  • 1/3 teaspoon salt
  • ¼ cup unsalted butter
  • 4 ounces dark chocolate, chopped
  • ¾ cup granulated sugar
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • ½ cup whole milk
  • 3 ripe pears, peeled, cored, and chopped into large chunks



Instructions:



Preheat the oven to 350°F (175°C). Grease a 9×9 inch square pan or a 9 inch round springform pan. Line the bottom of the pan with parchment paper if using a springform pan.


In a medium bowl, mix flour, cocoa powder, baking soda, and salt.
Melt butter and dark chocolate in a microwave or over a stove top in a small pan on low heat. Stir well.


Transfer the melted chocolate mixture to a large mixing bowl, add sugar, and beat with an electric mixer on medium-high speed for a couple of minutes until light in color.


Add eggs and vanilla, continue beating to combine.
Alternately add the flour mixture and milk in two additions into the chocolate mixture.


Pour the batter into the prepared pan and scatter chopped pears on top.
Bake for about 45 minutes or until a toothpick inserted in the center comes out clean and the cake springs back when touched.
Cool on a wire rack for 15-30 minutes. Release the cake from the springform pan if used.


Dust with powdered sugar before serving.
