Ingredients:
  • 1 tablespoon olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 celery sticks, finely chopped

  • 1 litre (4 cups) chicken stock
  • 500g chicken thigh fillets, trimmed, chopped
  • 1/2 cup long-grain white rice
  • 1/2 cup thickened cream
  • 1/4 cup chopped fresh flat-leaf parsley leaves
  • Salt and pepper, to taste
Instructions:
Heat the olive oil in a large saucepan over medium heat. Add the onion, garlic, celery, and carrot. Cook, stirring, for 5 minutes or until the vegetables soften.
Add the chicken stock and bring to the boil. Reduce heat to low and simmer, uncovered, for 5 minutes.
Add the chicken and rice. Simmer, partially covered, for 15 minutes or until the chicken is cooked through and the rice is tender.
Stir in the cream and parsley. Season with salt and pepper.
Cook for a further 5 minutes or until heated through.
