Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 fennel bulb, thinly sliced
  • 1/2 teaspoon red pepper flakes
  • 1 cup white wine
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups fish stock
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 pound mussels, cleaned
  • 1 pound clams, cleaned
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound firm white fish, cut into chunks
  • 1/4 cup chopped fresh parsley


Directions:



Heat olive oil in a large pot over medium heat.
Add onion, garlic, bell pepper, fennel, and red pepper flakes, sautéing until vegetables are softened, about 5 minutes.
Pour in white wine and simmer until reduced by half, about 4 minutes.
Stir in crushed tomatoes, fish stock, bay leaf, oregano, and basil. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
Add mussels, clams, shrimp, and fish to the pot. Cover and cook until all the seafood is cooked and shellfish have opened, about 10 minutes.
Discard any unopened shellfish. Stir in fresh parsley before serving.
