Ingredients:
- ¾ cup of chopped onion
- ⅓ cup dried bread crumbs
- 1 pound lean ground beef
- ¼ cup your choice Barbecue sauce
- 2 tsp chili powder
- ¾ tsp salt
- 1 egg beaten
- Potatoes
- 1 package instant butter flavored mashed potato mix
- ⅔ cup evaporated milk
- 1 tbsp chopped parsley
- 1 tbsp butter
- 1 tsp garlic powder
- 1 cup cooked and crumbled bacon
- ¼ cup crispy fried onions
- ⅔ cup Monterey Jack shredded cheese
Instructions
Heat the oven to 375*, lightly spray a 9×9 baking pan
Using a large bowl, combine the ground beef, onion, barbecue sauce, bread crumbs, egg and spices.
Press the meat mix into the bottom of the sprayed pan
Bake uncovered for 20 minutes
Remove from oven and drain grease off carefully
In another bowl, make the instant potatoes and mix with evaporated milk, cheese, dried onions, butter and bacon
Spread the potato mix on top of the meat and sprinkle with shredded cheese, bacon and dried onions.
Place under a broiler, 6 inches from the broiler, and broil for 3 minutes.
Serve with an additional serving of Barbecue sauce if you would like.
