Mini Meat Loaves

 

I love making meatloaf like this- easy to freeze and pop one or two out for easy meals. I use bread instead of oatmeal though. Just another option.

They slice great for sandwiches if you have leftovers.

Mini meat loaves are individual-sized portions of the classic comfort food, perfect for a quick and easy dinner. To make mini meat loaves, you’ll need ground meat (such as beef, turkey, or a combination), breadcrumbs, eggs, onion, garlic, Worcestershire sauce, salt, pepper, and any other seasonings you like.

Simply mix all the ingredients together in a bowl, then shape the mixture into small loaves. You can bake them in muffin tins for easy portioning and serving.

For a finishing touch, you can top the mini meat loaves with ketchup, barbecue sauce, or a glaze made from brown sugar and mustard before baking. Serve them with mashed potatoes and green beans for a classic comfort food meal that’s sure to please.

Ingredients:

  • 1 Egg
  • 3/4C Milk
  • 1C Shredded Cheddar Cheese
  • 1/2C Chopped Onion
  • 1/2C Dry Oatmeal
  • 1tsp Salt
  • 1 lb Ground Beef

method:

Mix ingredients together in order given and shape into 4 loaves
Topping
Combine 1/2CKetchup with 1/2Cup Brown Sugar and 1tsp Mustard. Top each loaf completely and bake @350 for 45Min.
Notes: You can use Ground Turkey but omit or reduce the milk.
I like to put my loaves in a rack over a foil lined pan. It allows the grease to drain away and makes clean up a breeze
