Peach Cobbler Muffins

Peach cobbler muffins are a delightful twist on traditional peach cobbler, combining the flavors of juicy peaches and warm spices in a portable muffin form. These muffins are perfect for breakfast, brunch, or as a sweet treat any time of day.

To make peach cobbler muffins, start by preheating your oven and preparing a muffin tin with paper liners. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.

In a separate bowl, mix together melted butter, milk, eggs, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined. Gently fold in diced peaches until evenly distributed throughout the batter.

Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full. In a small bowl, mix together brown sugar, flour, and cinnamon for the streusel topping. Sprinkle the streusel over the muffin batter.

Bake the muffins in the preheated oven until they are golden brown and a toothpick inserted into the center comes out clean, about 20-25 minutes. Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Serve the peach cobbler muffins warm or at room temperature. They are delicious on their own or topped with a dollop of whipped cream or a scoop of vanilla ice cream.
