  • 2 lbs hamburger meat
  • 1 pack cornbread stuffing mix
  • 1 cup chicken broth
  • 2 tbsp brown sugar
  • 2 eggs
  • 1 cup bbq sauce divided , (I like sweet bbq sauce for this)



Mix all ingredients besides 1/2 cup of bbq sauce. Spray muffin pan with non stick spray and preheat oven to 375.

Fill 3/4 way with meat mixture and bake for 15-20 minutes. Start making potato recipe below. Take out meatloaves and brush with remaining bbq. Return to oven 10 minutes.

Asiago mashed potatoes
4-5 red skinned potatoes, I left skin on cut in 1 inch piece
2 egg yolks
3 tbsp butter
1/3 cup heavy cream
Salt and pepper to taste
2 tsp garlic powder
1 tsp onion powder
 tbsp oregano
 cup Asiago cheese freshly grated

Boil potatoes until fork tender.

Drain. Add other ingredients. I used a star piping tip to top the meatloaf and baked another 10-15 minutes until the potatoes have a slight golden color
