Ingredients:
- 700g onion, finely chopped
- 100g bacon, cut into small strips
- Oil for frying
- 1kg beef cubes
- Salt to taste
- Pepper to taste
- 1 teaspoon rosemary
- 1 teaspoon thyme
- 1 teaspoon cumin
- 1 tablespoon sweet paprika
- 2/3 tablespoon hot paprika
- 2 tablespoons tomato paste
- 300ml red wine
- 300ml water
- 3 bay leaves
Peel and finely chop the onion. Cut the bacon into small strips.
Heat oil in a large pot over medium heat. Add the bacon and fry until it begins to brown. Remove the bacon and set aside.
In the same pot, add the beef cubes and fry for a few minutes until browned. Remove the beef and set aside.
Add the chopped onion to the pot and sauté until soft.
Return the beef and bacon to the pot. Add salt, pepper, rosemary, thyme, cumin, sweet paprika, hot paprika, and tomato paste. Stir to combine.
Pour in the red wine and water, and mix well. Add the bay leaves.
Cover the pot with a lid and simmer for about 30 minutes, or until the beef is tender.
Remove the pot from heat and serve hot.
