It’s no secret that I’ve been using the same cheesecake base for years. It’s the best. I baked this cheesecake about a month ago and couldn’t wait to share the recipe with you all but first wanted to get the Thanksgiving recipes out of the way first.

I added some fruity pebbles to the cheesecake batter and after the cheesecake was done baking and cooling, I topped it off with more fruity pebbles. It gives it such a nice crunch, who knew cheesecake needed crunch?

You can serve this cheesecake with some whipped cream if you’d like.

FRUITY PEBBLE CRUST
Of course, I had to make the crust using fruity pebbles and butter! No sugar required.
Fruity Pebbles Cheesecake is a no-bake dessert made with loads of Fruity Pebbles cereal. In fact, not only does the cheesecake have cereal inside, but the crust is made of cereal, too!

We have made an insane amount of cheesecakes over the years. We’ve done everything from miniature cheesecakes to cheesecake cookies. But one thing we haven’t done yet, was make one with breakfast cereal. Until now.

Fruity Pebbles Cheesecake
At my house, my kids are big Fruity Pebbles fans, which was the inspiration behind this dessert. In truth, I enjoy a big bowl of Fruity Pebbles cereal just as much as the kiddos do. When you mix it up with cream cheese, powdered sugar and marshmallow cream, it takes on a whole new delicious life.

Fruity Pebbles Cheesecake

Here Are The Ingredients You Need for The Crust
Fruity Pebbles. One box will be enough for both the crust and the cheesecake.
Mini Marshmallows. This (along with the butter) holds the cereal together to form a crust that’s similar to a rice krispie treat.
Butter. Grab unsalted butter for this recipe.
No-Bake Cheesecake Ingredients
Fruity Pebbles. We’ve mentioned that a time or two, right? 😉
Cream Cheese. The key ingredient to any great cheesecake. Make sure you’ve let it set out to reach room temperature.
Powdered Sugar. To add sweetness.
Vanilla. Also to add some sweetness.
Marshmallow Cream. Our secret ingredient!

 

INGREDIENTS:
  • Fruit Pebble Crust:
  • 2 cups Fruity Pebbles
  • 1 cup marshmallows
  • 6 tbsp unsalted Butter
Cheesecake filling:
  • 2 8oz packages of softened cream cheese
  • 2 cups Fruity Pebbles 1 cup whole, 1 cup crushed
  • 1 envelope gelatin
  • 1 cup powdered sugar

 

INSTRUCTIONS:
For The Crust:
Melt butter in a pot. Add marshmallows and stir until the marshmallows are fully melted. Add 2 cups of Fruity Pebbles and mix well.
Fill the pie tray with the marshmallow mixture,
Using your hands, press down the mix into the tray. Refrigerate for 20 minutes.
Cheesecake Filling:
Add the cream cheese to a bowl of a stand mixer fitted with beating attachment. Begin to beat the cream cheese. Add powdered sugar, 1 cup of whole Fruity Pebbles and continue to mix.
Combine the gelatin with water. Heat in the microwave for about 10 seconds or until the gelatin dissolves and becomes liquid. As the cream cheese mixture continues to combine, add a stream of the gelatin to the bowl.
Add the cream cheese mixture to the pie tray.
Sprinkled the crushed fruity pebbles on top. Put in the fridge to set and enjoy!
