Wedding Cookies Recipe

Wedding cookies, also known as Mexican wedding cookies, Russian tea cakes, or snowball cookies, are delicate, buttery, and nutty cookies that are perfect for special occasions, including weddings. These cookies are typically made with a few simple ingredients, including butter, flour, powdered sugar, and finely chopped nuts, such as pecans or walnuts. They are rolled into balls, baked until lightly golden, and then rolled in powdered sugar while still warm.

To make wedding cookies, start by preheating your oven to 325°F (165°C) and lining a baking sheet with parchment paper. In a large bowl, cream together 1 cup of softened butter and 1/2 cup of powdered sugar until light and fluffy. Stir in 1 teaspoon of vanilla extract and 2 cups of all-purpose flour until well combined. Finally, stir in 1 cup of finely chopped nuts until evenly distributed.

Shape the dough into 1-inch balls and place them on the prepared baking sheet. Bake the cookies for 15-18 minutes, or until they are set but not browned. Remove the cookies from the oven and let them cool for a few minutes.

While the cookies are still warm, roll them in powdered sugar until they are well coated. Place the cookies on a wire rack to cool completely, then roll them in powdered sugar again to ensure they are fully coated. These cookies can be stored in an airtight container at room temperature for up to a week.

Wedding cookies are a delightful treat that is sure to please your guests. They are perfect for serving at weddings, bridal showers, or any special occasion. Their delicate texture and buttery flavor make them a classic cookie that is loved by many.
