Ingredients:


For the Cake:

  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1 tablespoon vegetable oil
  • 2 tablespoons buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

 Decoration:

  • Powdered sugar (for dusting)
  • Christmas-themed sprinkles or edible decorations

 

Directions:

Preheat and Prepare:
Preheat your oven to 350°F (175°C).
Line a jelly roll pan (10×15 inches) with parchment paper and lightly grease it.


Make the Cake Batter:
In a large bowl, beat the eggs for about 5 minutes until thick and lemon-colored.
Gradually add granulated sugar, beating until the mixture is light and fluffy.
Stir in vegetable oil, buttermilk, and vanilla extract.
In a separate bowl, combine flour, baking powder, and salt. Gently fold this into the egg mixture.
Bake:
Spread the batter evenly in the prepared pan.
Bake for 12-15 minutes or until the cake springs back when lightly touched.
Roll the Cake:


Immediately after removing from the oven, turn the cake onto a clean kitchen towel dusted with powdered sugar.
Peel off parchment paper.
Starting at one of the short ends, roll the cake up in the towel. Let it cool completely.
Prepare the Filling:
In a bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Assemble the Cake:
Carefully unroll the cooled cake.
Spread the whipped cream filling evenly over the cake.
Roll the cake back up, without the towel.


Decorate:
Dust with powdered sugar and add Christmas-themed sprinkles or decorations.
