Coconut Poke Cake

Coconut poke cake is a delicious and moist dessert made with a tender coconut cake base, soaked with coconut cream and topped with whipped cream and shredded coconut. Here’s how you can make it:

Ingredients:

For the cake:

  • – 1 box (15.25 ounces) white cake mix
  • – Ingredients required to prepare the cake mix (eggs, oil, water), as per package instructions
  • – 1 cup sweetened shredded coconut

 the coconut cream:

  • – 1 can (13.5 ounces) coconut milk
  • – 1 can (14 ounces) sweetened condensed milk
  • – 1 cup sweetened shredded coconut

For the topping:

  • – 2 cups heavy cream
  • – 1/4 cup powdered sugar
  • – 1 teaspoon vanilla extract
  • – 1 cup sweetened shredded coconut, toasted (for garnish)

Instructions:

1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.

2. Prepare the white cake mix according to the package instructions. Fold in 1 cup of sweetened shredded coconut into the batter.

3. Pour the cake batter into the prepared baking dish and smooth the top with a spatula.

4. Bake the cake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

5. While the cake is baking, prepare the coconut cream mixture. In a mixing bowl, whisk together the coconut milk and sweetened condensed milk until well combined. Stir in 1 cup of sweetened shredded coconut.

6. Once the cake is baked, remove it from the oven and allow it to cool for about 10 minutes.

7. Use the handle of a wooden spoon to poke holes all over the surface of the cake.

8. Slowly pour the coconut cream mixture over the warm cake, ensuring that it seeps into the holes.

9. Cover the cake and refrigerate it for at least 4 hours, or overnight, to allow the flavors to meld and the cake to absorb the coconut cream.

10. Before serving, prepare the whipped cream topping. In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

11. Spread the whipped cream over the chilled cake.

12. Garnish the top of the cake with toasted sweetened shredded coconut.

13. Slice and serve the coconut poke cake chilled. Enjoy!

This coconut poke cake is moist, flavorful, and perfect for coconut lovers. It’s a refreshing dessert that’s great for any occasion, from potlucks to family gatherings.
