INGREDIENTS:

  •  1lb chicken breast, uncooked (*12oz cooked*) cut into bite sized pieces
  •  2 tsp avocado or olive oil
  •  4.5 c chopped Roma tomatoes
  •  3 fresh garlic cloves, chopped
  •  1 c shredded reduced fat mozzarella cheese
  •  1 tsp dried oregano
  •  1 tbsp balsamic vinegar
  •  Sea salt/pepper to taste
  • Fresh basil leaves
  •  Cooking spray

DIRECTIONS:

– Preheat oven to 375 degrees
– Heat oil in skillet on medium-high heat
– Add chicken, salt and black pepper
– Cook, stirring occasionally until golden brown on sides and almost cooked through
– Transfer chicken to an 8 x 8 baking dish (sprayed/brushed with oil)
– Top with chopped tomatoes, oregano, garlic and drizzle of balsamic vinegar
– Sprinkle with mozzarella cheese
– Bake uncovered 18-20 minutes, just until the cheese is melt and sauce bubbling at the bottom of the dish
– Remove from oven and let set for 5 min
– Garnish with basil
